Old-Fashioned Bread Stuffing with Sausage








I make my mother in laws recipe every year. Its so simple, Bell�s bread crumbs, minced sweet onion and celery, raw pork sauage pureed with abit of water in a food processor, canned potatoes pureed with a bit of water in a food processor then add chicken broth and mix all together and bake.

Ingredients
  • 2 tbsp finely chopped fresh sage
  • 1 lb bulk pork breakfast sausage
  • Kosher salt and fresh cracked pepper
  • 2 carrots, finely diced (1 cup)
  • 2 tbsp finely chopped fresh thyme
  • � cup unsalted butter (1 stick), more for baking dish
  • 2 lbs good quality white bread, cut into 1-inch cubes (about 20 cups)
  • 4 ribs celery, plus some leafy tops, finely diced (1� cups)
  • 1 sweet onion, finely diced (2� cups)
  • 3 cups homemade turkey stock, or chicken broth or stock

Instructions

First Preheat oven to 350�.  Spread bread cubes on two large baking sheets and toast for 30 minutes, stirring and rotating pans, until lightly browned and crisp.  Transfer to very large bowl when done.

Then Meanwhile, in large skillet, melt 1 stick of butter.  Pour half the melted butter in a bowl and reserve for later, to brush the top of the stuffing.  To the pan with remaining melted butter, add celery, carrots and onion, a sprinkle of salt, and cook and stir over medium-high heat until softened and starting to brown, about 8 to 10 minutes.  Transfer vegetables to bowl.  Add sausage to skillet in chunks, and cook, breaking it up with wooden spoon, until cooked through and lightly browned, about 6 minutes.  

Return vegetable mixture to the skillet and add the sage and thyme, a little salt and pepper, and cook for 1 minute.  Add 1 cup of stock, cook and stir up any browned bits, until stock is reduced and cooked down by half, about 5 minutes.

Transfer sausage mixture to bowl with the toasted bread cubes.  Add remaining 2 to 2� cups of stock and toss well until bread cubes are evenly moistened.  Taste and season with salt and pepper.  Spread stuffing into large, buttered baking dish (about 3� quart size) and brush with the reserved melted butter.

Bake in center of oven until heated through and nicely browned, about 1 hour, rotating casserole halfway through.  Let stuffing rest 10 minutes before serving. Happy Cooking TimeJ

Slow Cooker Smothered Turkey Wings Can you use the same recipe in the oven and also can you add the gravy mix after the wing are done. Ingredients 3 tsp seasoning salt 1 tbsp onion powder 6 cups chicken or turkey broth 1 tbsp garlic powder 1 large portobello mushroom diced 1 1/2 tsp dried thyme 2 large turkey wings separated in 3 parts( flat, drum, tip) 1 large red onion diced 4-5 fresh sage leaves chopped 1/2 cup all purpose flour 1 1/2 tsp celery seed 3/4 cup vegetable oil Instructions First Combine the flour and seasonings into a large bowl and whisk. Then Coat the turkey wings with the flour, then let sit for about 5-10 minutes. DO NOT TOSS OUT THE EXCESS FLOUR! Pour 1/2 cup of the vegetable oil into a large pan, and turn the heat to medium. Once the oil is nice and hot, add in some of the turkey, but be sure to not overcrowd the pan. Remove the turkey once browned, and place the turkey into the slow cooker. N

GRANDMA�S BALAH EL SHAM INGREDIENTS FOR THE VANILLA SUGAR SYRUP:  1 cup water  1/2 teaspoon vanilla extract or 1 powdered vanilla packet  2 cups (400g) granulated sugar  A squeeze of lemon, about 1/2 teaspoon FOR THE FRITTER (BALAH EL SHAM) DOUGH:  5 large eggs  1 1/2 cup water 1/2 cup (4oz/ 114g) unsalted butter*  Vegetable oil, for deep frying  2 cups (240g) all purpose flour  1/4 teaspoon salt  2 teaspoons vanilla extract or 10 packets powdered vanilla *   FOR GARNISH: (OPTIONAL)  Pistachios INSTRUCTIONS FIRST   TO MAKE THE VANILLA SUGAR SYRUP In the small saucepan, combine together the sugar, water and squeeze of lemon juice.
